Creamy Garlic Chicken

- Heat oil in a large skillet over medium high heat. Add chicken, season with salt and pepper, and cook for 5 minutes on each side, or until it's fully cooked. Remove from skillet and set aside.
- To the same skillet, add garlic, chicken broth, garlic powder and Italian seasoning. Mix. When it begins to simmer, add heavy cream and bring to a boil. Whisk until sauce starts to thicken.
- Add tomatoes, spinach and cooked chicken to the sauce. Stir. Cover with parmesan cheese and mix until the cheese is fully melted, spinach is wilted and chicken is fully coated.
- Serve and enjoy!
Simple, easy, delicious
This is a great meal! I serve it with a pasta (any kind works). Quick and easy, not a lot of ingredients, and very, very tasty. My husband watched me plop the spinach in the pan with a raised eyebrow and the comment, “you know, I’m not a real fan of cooked spinach..” (neither am I), but of course, you don’t even realize your eating spinach! Just be sure to brown the chicken, it works much better – otherwise, the chicken is a little soggy at serving. I’ve made it several times. Also, it’s good enough for me to post a first-time-ever review! Try it.
