8 - 12 wedges

Ingredients

  • 1 large, sweet onion
  • 1 cup buttermilk
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper
  • Vegetable oil, for frying
  • DIPPING SAUCE INGREDIENTS
  • 2 teaspoons milk
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper
  • 1 teaspoon chipotle pepper
  • 1/2 cup mayonnaise

Instructions

1) In a large bowl, whisk together buttermilk and eggs.

2) Prep onions by slicing off the non-root end. Slice off as little as possible. Carefully peel onions. Use a sharp knife to cut the onion into vertical wedges. Keep your pieces attached by the root. After you slice each onion, press on it gently to separate the sections. Coat onions in the buttermilk and eggs. Let rest for 10 minutes.

3) While your onions rest, prepare the sauce by whisking milk, garlic powder, pepper, chipotle pepper and mayonnaise in a small bowl.

4) In another bowl combine flour, paprika, salt, pepper, garlic powder and cayenne pepper. Remove onions from buttermilk mixture and coat heavily with flour mixture. Be sure to get it in all the cracks of the onions. Move coated onions to a clean plate.

5) Heat frying oil to 350 degrees Fahrenheit. Fry onions for about 4 minutes or until they are golden brown.

6) Remove onions and drain on a paper towel. Serve while hot with dipping sauce and enjoy!
