Chili-Lime Tilapia

Ingredients

  • 4 to 6 ounce tilapia filet
  • 2 tablespoons butter, melted
  • 2 tablespoons lime juice
  • 1 tablespoon chili seasoning
  • 1/4 cup corn
  • 1/4 cup black beans
  • Salt and pepper, to taste
  • Sliced limes
  • Directions

    1) Preheat oven to 375 degrees Fahrenheit.

    2) Lay out a large piece of foil and grease with cooking spray. Place tilapia on foil.

    3) In a small bowl, whisk together butter, lime juice and chili seasoning. Brush on both sides of the tilapia.

    4) Surround tilapia with corn and black beans. Pour remaining chili-lime mixture over the top. Season with salt and pepper. Place sliced limes over tilapia.

    5) Fold foil until you’ve created a pack. Use more foil if necessary. Bake for 20 minutes.

    6) Remove from oven and carefully open foil as contents will be hot. Serve and enjoy!

    Garlic Salmon

    Ingredients

  • 1/2 bunch asparagus, trimmed
  • 4 to 6 ounce salmon filet
  • 10 cherry tomatoes, halved
  • 2 tablespoons butter, melted
  • 3 gloves garlic, minced
  • 2 tablespoons grated Parmesan cheese
  • Salt and pepper, to taste
  • Directions

    1) Preheat oven to 375 degrees Fahrenheit.

    2) Lay out a large piece of foil and grease with cooking spray. Place asparagus on foil and place salmon on top. Surround salmon with cherry tomatoes.

    3) In a small bowl, whisk together butter, garlic and parmesan cheese. Pour over salmon. Season with salt and pepper.

    4) Fold foil until you’ve created a pack. Use more foil if necessary. Bake for 20 minutes.

    5) Remove from oven and carefully open foil as contents will be hot. Serve and enjoy!

    Shrimp Fajitas

    Ingredients

  • 1/2 cup sliced bell peppers
  • 1/2 cup sliced onions
  • 10 to 12 piece shrimp, peeled and deveined
  • 1 tablespoon chili powder
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Tortillas, for serving
  • Sour cream, for serving
  • Chopped cilantro, for garnish

    1) Preheat oven to 375 degrees Fahrenheit.

    2) Lay out a large piece of foil and grease with cooking spray. Add bell peppers and onions to foil. Top with shrimp.

    3) In a small bowl, whisk together chili powder and olive oil. Pour over shrimp and veggies. Season with salt and pepper.

    4) Fold foil until you’ve created a pack. Use more foil if necessary. Bake for 20 minutes.

    5) Remove from oven and carefully open foil as contents will be hot. Serve over a tortilla with sour cream and cilantro. Enjoy!
