Sweet and Sour Couscous Stuffed Peppers

Bell peppers often differ in color and in flavor. Red and yellow peppers are essentially ripened versions of green peppers – the more ripe they are, the sweeter the flavor. Among the three, red peppers are known to have the sweetest flavor, yellow peppers yields a combination of sweet and bitter taste, and green peppers are known to have the most earthy flavor. To have a sweetened dish, use red pepper along with the sweet and sour sauce. Alternatively, the earthy/bitter flavors of yellow and green peppers balances out the sauce nicely. To have a variety that suits all taste buds, we’re opting for a variety of red, yellow, and green peppers for this recipe.
