Sweet and Sour Couscous Stuffed Peppers

This Sweet and Sour Couscous recipe is a blend between various cuisines. From Chinese sweet and sour sauce to North African couscous and Spanish style-stuffed peppers, this dish blends a variety of flavors and ingredients together harmoniously. We’re all familiar with Chinese sweet and sour chicken but for a healthier spin, we’re taking that flavor to couscous and stuffing it into a tender bell pepper. Bell peppers often differ in color and in flavor. Red and yellow peppers are essentially ripened versions of green peppers – the more ripe they are, the sweeter the flavor. Among the three, red peppers are known to have the sweetest flavor, yellow peppers yields a combination of sweet and bitter taste, and green peppers are known to have the most earthy flavor. To have a sweetened dish, use red pepper along with the sweet and sour sauce. Alternatively, the earthy/bitter flavors of yellow and green peppers balances out the sauce nicely. To have a variety that suits all taste buds, we’re opting for a variety of red, yellow, and green peppers for this recipe.
