Zucchini Pasta with Creamy Avocado Sauce

  • 2 zucchinis, spiralized

  • 1 avocado, peeled

  • 2 garlic cloves, minced

  • Salt and pepper to taste

  • 4-5 basil leaves

  • Juice of ½ lemon

  • 5 tablespoons water

  • ½ teaspoon chili flakes

  • 2 tablespoons peanut butter

  • 2 tablespoons olive oil

    1. In a high-speed blender, food processor or mini chopper add the avocado, garlic cloves, salt and pepper to taste, basil leaves, juice of ½ lemon, water, chili flakes, peanut butter, and olive oil and blitz until creamy and delicious.
    2. After 2-3 minutes blending pours the sauce into the spiralized zucchini and toss until combined.
    3. Serve and enjoy.
