  • 1 small can corn

  • 1 zucchini, diced into small cubes

  • 1 chili, diced

  • 2 tablespoons parsley, chopped

  • 2 spring onions, diced

  • 1 avocado, diced into cubes

  • Juice of 1 lemon

  • Salt and pepper to taste

    1. In a large mixing bowl add the drained can of corn, diced zucchini, chili, parsley, spring onions, diced avocado, juice of a lemon and salt and pepper to taste. 
    2. Mix until everything is combined and let the salsa chill in the fridge for 15 minutes. 
    3. Serve cold and enjoy.
