This recipe is lovely and sweet – it’s about to be a hot Popsicle summer! Okay, summer isn’t here just yet, but I do love a good Popsicle and I’m super excited. The sight of these pink-pretty popsicles brings memories of the previous summer – I don’t know why but it keeps happening. Have you been so busy working while the fruits on your counter ripen away?

Don’t let those ripe fruits go to waste, try this recipe and thank me later. Strawberry Banana Popsicles are a delicious treat made from strawberries, fruit juice, and frozen banana. Strawberry banana popsicles have an exotic fruity taste and creamy texture that will make you keep craving more. I like to keep everything fruity, so for the juice, I usually go with pineapple juice; it forms a great combo with the creamy bananas and syrupy strawberries.

Freshly squeezed orange juice is a great alternative to that. As for the bananas, frozen bananas are preferable because it adds a rich creamy feel to the recipe. Popsicles sold in most stores are infused with sweeteners such as high fructose corn syrup and that’s the great thing about this recipe – it is super healthy because it uses only fruits, so there’s no need for sweeteners and that only means your kids can eat as many of these delightful popsicles as they want – you can join in with the fun too!

The making process is as easy as it gets. All you have to do is blend all fruits, pour into a Popsicle mold and voila! If you can’t lay hands on a Popsicle mold, you can use plastic cups or ice cube trays. To guarantee the sweet taste, ensure you use ripe fruits only. The best part is you can get creative with this recipe. Switch the fruits into any other fruits of your choice; raspberry, pineapple, or mango. Throw in some honey or Greek yogurt to add the extra kick in.

Note: Ensure you taste the mixture before freezing. Also, if you prefer your popsicles to be sweeter, you can throw in a bit of honey. However, to maintain its health benefits, the use of artificial sweeteners are strongly not advisable.

  1. Blend all of the ingredients together on high speed until smooth—about 2 minutes. Scrape down the sides of the blender.
  2. Pour the mixture into popsicle molds. If popsicle mold has slots for sticks, insert them before freezing—if not, freeze for 2 hours, then put a wooden popsicle stick in the middle. Continue to freeze for an additional 6 hours or overnight. Overnight is recommended for easy removal.
  3. Run popsicle molds under warm water to easily remove. Eat on a hot day. Enjoy!
