This luscious recipe is made from fresh, healthy veggies rolled to form a tortilla with a little feel of hummus. It is kid-friendly and a subtle way to pack in veggies for your kids. Ingredients needed include baby spinach, bell pepper, black beans, shredded cheese (optional), hummus, green onion, Mexican spices (such as chili powder, garlic powder, onion powder, cumin), and spinach or gluten-free wraps.

How to make delicious Mexican pinwheel

 You start by cutting the green onion, orange and red pepper into thin slices. Next, Put the sliced veggies and black beans in a bowl and mix with garlic powder, chili powder, kosher salt, and onion powder.  

After that, spread the hummus with ¼’’ around the edge of each tortilla in a thin layer. Cut the spinach in half and place in the middle of each tortilla. Then line up the peppers on one side and the black beans on the other side. Divide the cheese into two and sprinkle half of it on each tortilla. 

Roll up the tortilla as tight as possible and cut off the ends. Slice what’s left into 8 pieces. Serve with salsa as a dip for lunch.

The most challenging part of the making process is rolling the pinwheel. So here are a few tips to help you with that. 

  • Roll tightly: Try to roll as tight as possible to ensure the rolls stick together after you slice them
  • Don’t worry about falling fillings: It is pretty normal for some of the fillings to fall out because when you roll the pinwheel, the filling will be pushed towards the end. 
  • Cut the ends: The ends of the roll don’t have a flat edge and we need to form a wheel shape. This is why you need to cut off both ends of the roll. You can discard or eat them as you continue to work.

For instance, you can replace the spices with a seasoning blend like fajita seasoning or taco seasoning. You can use any combo of veggies also and to go vegan just leave out the cheese.
