Menemen (Turkish Egg Scramble)

If you’re stuck in a breakfast rut and need something to break you out of your boring toast-and-oatmeal routine, then look no further. We’ve got a recipe for a dish that is packed with sauteed veggies, tangy feta cheese, rich, runny eggs, and just a hint of spice! 

Introducing Menemen; the dish that’s fun to say and to eat! Menemen is a very common breakfast dish in Turkey. Although it can be a year-round dish, it’s especially pleasing in the summer, when gardens and farmer’s markets are bursting with fresh tomatoes. Even if you don’t have access to farm-fresh produce, this meal can easily be made with staples you already have in your pantry! 

While Menemen may sound fancy and exotic, it’s surprisingly easy to make. If you’re a beginner cook looking to impress your brunch guests, then you absolutely have to give this recipe a try! It looks fancy, tastes absolutely delicious, and can be made in one pan in less than 30 minutes! What more could a hungry person ask for?

Another great thing about this dish is how easy it is to customize. Feeling carnivorous? Try throwing in some sausage. Want some extra spice? Add a couple of garlic cloves and a dash or two of dried herbs. Don’t have canned tomatoes on your shelves? Pop over to the grocery store and grab a couple of fresh ones. 

Since this dish comes together quickly, it might be a good idea to get all your ingredients together before you start cooking. Dice the onions and peppers while your skillet heats up, and have your can of tomatoes open and ready. 

Once you’ve got your mise en place in place, it’s time to sautee! Throw the onions and peppers into the pan and let them get good and soft. Once they’re ready, throw in the tomatoes, butter, salt, and pepper, mix it all together, then sit back and let the magic happen. Let everything simmer for a couple of minutes so that all the flavors have time to build on top of one another. But don’t let it go for too long! We don’t want all the juices from the tomatoes to boil away, so keep an eye on your pan. 

Now it’s time for the best part. Crack your eggs into the tomato-veggie mixture, and lightly mix them in. Cover, and continue to let things cook until the eggs reach the desired level of done-ness. A good tip is to take them off the heat just before they’re done! The heat from the mixture will keep cooking the eggs, so by the time you serve them, they will be absolutely perfect. 

Now all that’s left to do is sprinkle some feta cheese and fresh parsley on top, grab some crusty bread for dipping, and enjoy! You can scoop individual servings into bowls, or just let everyone eat right out of the pan. Whatever works best for you! As long as you’re enjoying your Menemen, you’re doing it right.
