Mashed Potato Balls

  • 2 cups cold mashed potatoes

  • 1 eggs, beaten

  • 2 tbsp. Chopped parsley

  • 1 tsp salt

  • ½ tsp pepper

  • ¼ cup panko breadcrumbs

  • Frying oil

  • Maldon salt, for finishing

    To Serve:
    • 6 servings

    1. Add the mashed potatoes to a bowl along with egg, chopped parsley, salt and pepper. 
    2. Roll potato mixture into balls and then roll them in the pankp breadcrumbs and then set on a tray while you heat the oil. Make as many as you can with the potato mix. 
    3. When the oil is hot, fry the balls for a few minutes, rolling them around so they fry evenly. As soon as the balls come out of the oil place them on a paper towel and hit them with a sprinkle of maldon salt.
