Ingredients
  • 11/2 cup salsa

  • 1 cup Chicken Stock

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 1/2 teaspoon cumin

  • 1/2 teaspoon chili powder

  • 1/4 teaspoon salt

  • Freshly ground black pepper

  • 1 cup long-grain white rice, rinsed

  • 2 boneless, skinless chicken breasts

  • Fresh cilantro, for serving

    Instructions
    1. Add the salsa, chicken stock, the spices, salt, pepper, rice in the instant pot and stir it well. add the chicken on top of the rice mixture.
    2. On the Instant Pot, press the pressure cook button and set it to high. Use the buttons to set the time to 8 minutes. Place the lid on the instant pot, turn the valve to ‘seal’ and let it come to pressure. Once the cooking time is over. Release pressure immediately.
    3. Remove the lid from the Instant pot remove the chicken and pour the rice into a bowl.
    4. Shred the chicken with forks adds on top of the rice.
    5. Serve garnished with cilantro.
