Greek Pasta Salad

Ingredients

  • 2 cups rotini shaped pasta
  • 1 cup chopped cucumber (you can use mini or regular)
  • 1 cup chopped red bell pepper
  • 1 cup chopped yellow bell pepper
  • 3/4 cup chopped green bell pepper
  • 1 cup cherry tomatoes sliced in half
  • ½ cup finely chopped red onion
  • 1 cup feta cheese (drained and crumbled)
  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 1 tsp oregano
  • 1 tbsp maple syrup
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 small minced garlic cloves

Refresh your palate with our Greek Pasta Salad! 
  1. Bring 10 cups of water to a boil in a medium pot.
  2. While waiting for the water to boil. Chop the peppers, cucumbers, and tomatoes into bite-sized pieces. Chop the red onion finely. Place into a large salad bowl. 
  3. Pour the pasta into the water, once water is boiling, stir the pasta, and then cook per instructions on the pasta box. Usually around 10-12 minutes.
  4. While pasta is cooking, make the salad dressing by adding the olive oil, red wine vinegar, minced garlic, maple syrup, oregano, salt, and pepper into a bowl and whisk. Set aside.  
  5. Once the pasta is done cooking, drain the water in a strainer and rinse pasta with cold water until pasta is cold to touch.
  6. Pour pasta into the large salad bowl and add in the feta cheese. Mix dressing again with a whisk and pour over the salad. Mix the salad well and serve.
