  • 16 ounces dried green split peas, rinsed and drained

  • 2 cups diced ham

  • 2 cups diced potatoes

  • 2 cups shredded carrots

  • 2 tablespoons minced garlic

  • 8 cups chicken (or vegetable) broth

  • 1/2 cup fresh parsley, minced, plus more for garnish

  • 1 bay leaf

  • Salt and pepper, to taste

    1. Place all ingredients in a slow cooker. Stir to combine.
    2. Cover and cook on high of 4 to 5 hours, or on low for 8 to 10 hours. Taste and if necessary, season with more salt and pepper.
    3. Garnish with parsley, serve and enjoy!
