Rustic Bacon Beef Stew

  • 1 1/2 cups bacon, chopped

  • 2 pounds beef stew meat

  • Salt and pepper, to taste

  • 1 onion, diced

  • 3 cloves garlic, sliced

  • 2 tablespoons tomato paste

  • 1/4 cup flour

  • 1/4 cup beer of choice

  • 4 cups beef broth

  • 1 tablespoon dried thyme

  • 2 bay leaves

  • 4 carrots, halved and sliced

  • 1 1/2 pounds potatoes, quartered

  • Fresh parsley, for garnish (optional)

1) Preheat oven to 350 degrees Fahrenheit. 2) In a large pot over medium heat, crisp bacon. Remove from pot and set aside. 3) Add beef to pot, season with salt and pepper, and cook for 4 to 5 minutes on each side, or until the meat is browned. Remove from pot and set aside. 4) Add onions and garlic. Stir and cook for 5 minutes. Add beef back to pot and stir to combine. 5) Add tomato paste, flour, beer and broth. Stir. Add dried thyme and bay leaves. Stir again to combine. 6) Remove from heat and bake in oven for 2 hours. 7) Remove from oven, add carrots, potatoes and bacon (reserve some bacon for garnish). Stir. Place back in oven and bake for an hour. 8) Remove from oven, garnish with parsley and bacon, serve and enjoy!
