Pumpkin French Toast Cake

  • 1 loaf stale French bread, diced

  • 6 large eggs

  • 1 cup coconut sugar

  • 2 cups almond milk

  • 1 cup pumpkin puree

  • 1 1/2 tablespoons vanilla

  • 1 tablespoon pumpkin pie spice

  • 1/2 cup coconut sugar

  • 1/3 cup coconut flour

  • 2 teaspoons pumpkin pie spice

  • 1/2 cup chopped pecans

  • 1/2 cup coconut oil

    1. Lightly grease a 9×13 baking dish. Evenly spread diced bread into baking dish.
    2. In a large bowl, whisk together all the ingredients for the French toast. When fully combined, evenly pour over bread in baking dish.
    3. Cover with plastic wrap and refrigerate for at least 3 hours.
    4. When ready to bake, bring French toast to room temperature and preheat oven to 350 degrees Fahrenheit.
    5. To make the topping, mix together all the ingredients until fully combined. Spread topping evenly over bread. Top with whole pecans, if desired.
    6. Bake for 50 minutes. If the top starts to brown too quickly, cover with foil to prevent burning.
    7. Remove from oven and cool to room temperature. Serve and enjoy!
