One Pot Spicy Rice

  • 1 tablespoon olive oil

  • 1/2 cup onions, diced

  • 2 cloves garlic, minced

  • 1 can spicy or regular tomatoes in sauce

  • 1 can spicy enchilada sauce

  • 1 teaspoon paprika

  • 1 teaspoon paprika

  • 1 teaspoon salt

  • 1 teaspoon cumin

  • 1/2 teaspoon garlic powder

  • 1 1/2 cups uncooked rice

  • 1 cup cheddar cheese, shredded

  • 1 can black beans, drained

  • 1 cup chicken, cooked

  • Sour cream, chopped cilantro and salsa, for garnish

    1. In a pot over medium-high heat, cook onions and garlic until softened.
    2. Add tomatoes with the sauce, enchilada sauce, paprika, salt, cumin and garlic powder. Stir to combine.
    3. Add uncooked rice, cover and simmer for 20 minutes or until rice is cooked.
    4. When rice is cooked, add 1/2 cup of cheese, black beans, chicken and the remaining cheese. Cover and simmer until cheese melts.
    5. Stir to combine, serve with garnish and enjoy!
