One Pan Chicken And Asparagus

  • 1 1/2 pounds boneless, skinless chicken breasts

  • Lemon zest from 1/2 lemon

  • 4 tablespoons lemon juice

  • 1 tablespoon minced garlic

  • 5 tablespoons butter, melted

  • 1 cup panko

  • 1 cup parmesan cheese, grated

  • 1 teaspoon dried parsley

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 pound asparagus, washed and dried

  • 1 lemon, sliced

1) Preheat oven to 400 degrees Fahrenheit. Grease a baking pan or tray and set aside. 2) In a large bowl, marinate chicken with lemon zest, lemon juice, minced garlic and melted butter. Set aside. 3) In a separate bowl, mix together panko, 1/2 cup parmesan cheese, dried parsley, garlic powder, salt and pepper. 4) Coat chicken in panko mixture and place in baking tray. Surround with asparagus. Top with leftover lemon butter from the chicken bowl, remaining parmesan cheese and lemon slices. 5) Bake for 20 minutes, or until chicken is thoroughly cooked. 6) Remove from oven and serve immediately. Enjoy!
