  • 30 button mushrooms, cleaned and stems removed

  • 1/2 bottle red wine

  • 8 ounces whipped cream cheese

  • 1/4 cup chopped chives

  • 1/4 cup grated Parmesan cheese

  • Olive oil

  • Balsamic vinegar

    1. Preheat oven to 350 degrees Fahrenheit. Grease a baking sheet with cooking spray.
    2. Add mushrooms to a large bowl. Pour wine over mushrooms and stir to coat. Soak for 20 minutes.
    3. In a bowl mix together cream cheese, chives and Parmesan cheese.
    4. Remove mushrooms from the bowl and place them on the baking sheet. Fill each mushroom with cream cheese mixture.
    5. Bake for 10 to 15 minutes, or until tops are lightly golden.
    6. Drizzle with olive and oil and balsamic vinegar. Serve and enjoy!
