  • 3 cups mashed potatoes

  • 1 cup mozzarella cheese, shredded

  • 1 tablespoon fresh chives, chopped

  • 4 slices bacon, cooked and diced

  • 1/2 teaspoon chili pepper

  • 2 eggs, beaten

  • 1 1/2 cups Italian bread crumbs

  • 2 cups vegetable oil, for frying

1) In a large bowl, add mashed potatoes, mozzarella cheese, chives, bacon and chili pepper. Mix until fully combined. 2) Using your hands, roll mashed potatoes into 1 1/2 inch balls. Coat balls first in egg wash, then in bread crumbs, making sure they are fully coated. 3) While forming the mashed potato balls, heat oil in a deep skillet until it reaches 350 degrees Fahrenheit. 4) Add coated mashed potato balls to hot oil and fry for 2 to 3 minutes, or until fully golden brown. Remove from oil and drain on a paper towel-lined plate. You'll want to fry in batches so as not to overcrowd the oil. If your skillet starts running low on oil, simply add more. 5) Serve mashed potato balls immediately with dipping sauce of choice. Enjoy!
