Lasagna Cups

  • 12 lasagna noodles

  • 2 tablespoons olive oil, divided

  • 1 pound ground beef

  • 1 onion, diced

  • 2 celery stalks, chopped

  • 2 teaspoons crushed garlic

  • 1 (14.5-ounce) can diced tomatoes

  • 2 tablespoons tomato paste

  • 1/2 cup beef stock

  • Salt and pepper, to taste

  • Cooking spray

  • 1 1/2 cups shredded mozzarella cheese

    1. Cook lasagna sheets until just softened. Drain, cut in half and set aside.
    2. Preheat oven to 350 degrees Fahrenheit.
    3. Heat 1 tablespoon of olive oil in a large pot. Add ground beef and brown. Drain and set aside.
    4. Heat remaining olive oil in the same pot. Add onions, celery and garlic. Saute for 5 minutes, or until softened.
    5. Add beef back into pot. Stir in diced tomatoes, tomato paste, beef stock, salt and pepper. Cover and simmer for 15 minutes. Remove from heat.
    6. Grease a muffin tin with cooking spray. Press two pieces of lasagna noodle into each muffin tin. Divide meat sauce into each lasagna cup. Top with mozzarella cheese.
    7. Bake for 15 minutes, or until cheese is bubbly and melted. Remove from oven, serve and enjoy!
