Fruity Pebble Cupcakes

  • 1 box white cake mix

  • 4 egg whites

  • 3/4 cup buttermilk

  • 1/3 cup vegetable oil

  • 3.5 ounces vanilla Greek yogurt

  • 2 teaspoons vanilla extract

  • 3 cups Fruity Pebbles


  • 1 3/4 cups heavy whipping cream

  • 1 cup powdered sugar

  • 1 cup Fruity Pebbles

1) Preheat oven to 350 degrees Fahrenheit. Grease a cupcake tray or line with cupcake liners. 2) In a large bowl whisk together cake mix, egg whites, buttermilk, vegetable oil, vanilla Greek yogurt and vanilla extract until fully combined. Gently fold in Fruity Pebbles. 3) Scoop batter into cupcake tray. Bake for 25 minutes, or until a toothpick comes out clean when inserted into a cupcake. Remove from oven and cool complete. 4) While cupcakes cool, make the frosting. Beat heavy cream. Add powdered sugar and beat on medium-high speed until stiff peaks form. Scoop into a piping bag or a ziplock bag with the corner cut off. 5) Pipe frosting onto cooled cupcakes. Dip the tops of the cupcakes into Fruity Pebbles cereal. 6) Serve and enjoy!
