- In a large skillet, heat coconut oil on medium heat until melted. Add chicken to skillet, season with 1 teaspoon black pepper, 1 teaspoon salt, 1 teaspoon garlic powder and minced garlic. Stir. Cook until chicken is cooked through. Just before it’s done, season with chili powder.
- Add broccoli, zucchini and red bell peppers to the skillet. Season with remaining spices and stir to combine. Cook for another 5 to 10 minutes, or until vegetables are tender.
- Serve by itself or over rice and enjoy!
