Baked Brunch Omelet

  • 1 pound stale bread

  • 8 eggs

  • 2 cups milk

  • Hot sauce, to taste

  • Chopped bell pepper, to taste

  • 1/4 cup green onion, chopped

  • Pinch of salt

  • 3 cups shredded cheddar cheese

  • 1 cup cubed cooked ham

1) Preheat oven to 350 degrees Fahrenheit. Cut stale bread into cubes. Set aside.

2) In a large bowl, whisk together eggs, milk, hot sauce, bell pepper, green onions and salt.

3) Lightly grease a 9x13 inch oven-safe casserole dish.

4) Pour 1/3 of the egg mixture in the bottom of the dish. Top with half of the bread, half the cheddar cheese and half the ham. Repeat. Pour remaining egg mixture over the bread. Lightly stir to spread out the toppings.

5) Bake for 60 minutes, or until eggs have fully set. Allow to cool for 5 minutes.

6) Serve and enjoy!
