  • 12 slices bacon

  • 1 1/2 pounds ground beef

  • 1 cup bread crumbs

  • 1 onion, finely diced

  • 2 tablespoons brown sugar

  • 1 egg, lightly beaten

  • 1 1/2 tablespoons Dijon mustard

  • 8 ounces tomato paste

  • 1 1/2 tablespoons Worcestershire sauce

  • 1/2 teaspoon salt

  • 4 to 6 potatoes, peeled

  • 2 tablespoons butter

  • 1/4 cup cheddar cheese, shredded

  • 1/4 cup milk

  • 1/2 teaspoon salt

1) Pre-heat oven to 350 degrees Fahrenheit. Wrap each slice of bacon inside a muffin tin. Set aside. 2) In a large bowl, add ground beef, bread crumbs, onion, brown sugar, egg, Dijon mustard, tomato paste, Worcestershire sauce and salt. Mix to combine. 3) Separate your meat and roll it into 12 evenly sized balls and place each in the cupcake tin, with the bacon surrounding it. Bake for 1 hour. 4) While the meatloaf cupcakes bake, boil potatoes until soft. Drain and add butter, cheddar cheese, milk, and salt. Mash until smooth. Scoop all the mashed potatoes into a piping bag or a large ziplock bag with the corner cut off. 5) After an hour, remove meatloaf from oven and pipe the mashed potatoes on top of the cooked meatloaf cupcakes. 6) Increase oven temperature to 400 degrees and bake the cupcakes with the mashed potatoes on them for another 5 minutes. 7) Remove from oven and allow to cool for 10 minutes. Serve and enjoy!

Great recipe the whole family loved it. The only thing I will do different next time is use a cooking torch on top of the potatoes instead of putting them back in the oven.
