French Onion Chicken Bake

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon oil
  • ½ teaspoon fine sea salt
  • 5 medium onions, sliced thin
  • 3 garlic cloves, minced
  • 3 sprigs fresh thyme (or 1 teaspoon dried)
  • ½ cup beef stock
  • 1 tablespoon dijon mustard
  • 4 boneless, skinless chicken breasts
  • 3 cups cauliflower florets
  • 1 cup shredded mozzarella or gruyere cheese

This, ladies and gentlemen is the best French Onion Chicken Bake recipe – so good you might just get addicted! This mouth-watering dish is made by caramelizing onions on a stovetop, and then adding chicken, veggies, and/or cheese, and finally baked until perfection. This incredibly flavored dish is gluten-free and healthy. You can make your meal whole by throwing in some diced potatoes or add some cauliflower florets to make it low-carb. This recipe is easy to make. The first step is to caramelize the onions. To do that, cut the onions into thin slices and leave for a couple of minutes to sear at medium-high. In a few minutes, they will turn brown. You then proceed to reduce the heat to medium-low and then cook for about 10-15 minutes, while making sure to stir occasionally. After that, the onions will be soft and slightly browned. The next thing you have to do is use chicken broth and dijon mustard to deglaze the pan. Ensure you remove all brown onion bits and then add the remaining ingredients. Finally, place everything in the oven and allow to bake for about 20 minutes. This process will continue cooking the onions thereby making them sweet and softer. Enjoy!

  1. Preheat oven to 400ºF. Heat butter and oil over medium high heat in a large oven safe skillet. Add onions and cook for 5 minutes, until onions have browned. Reduce heat to medium low, add salt and and cook for an additional 10-15 minutes, stirring occasionally, until the onions have softened. Add garlic, thyme and cook for an additional 2 minutes. Add in beef stock and mustard and scrape up any browned bits and continue to cook until the liquid has reduced by half, about 2 minutes.
  2. Set aside ½ cup of the onion mixture. Add the cauliflower to the skillet and mix together with the onions.
  3. Season the chicken with salt and pepper then nestle the chicken in the skillet. Divide the set aside onions on top of the chicken.
  4. Place in the preheated oven and bake until chicken is cooked through, about 20 minutes.
  5. Preheat the broiler. Sprinkle the shredded cheese on top of the chicken and place under the broiler until the cheese is melty, about 1 minute. Remove thyme sprigs and serve.
