Chocolate Chip Pancakes

  • 4 eggs

  • 2 tablespoons maple syrup

  • 1 cup coconut milk

  • ½ cup coconut flour

  • 1 teaspoon baking soda

  • 1 pinch salt

  • ½ cup semisweet chocolate chips

  • Powdered sugar, optional

To Serve:
  • 4 servings

  1. Preheat a skillet with cooking spray to medium heat. 
  2. In a mixing bowl, whisk all the ingredients together. Then, fold in the chocolate chips. 
  3. Pour one ladle of mix into the pan and cook for about 5 minutes, until small bubbles pop up. Then, flip and cook for another minute.
