Begin preparation by making the dough: the bowl of a stand mixer, rub sugar and lemon zest together until all of the sugar gets moistened. Then add flour, yeast, and mix together. Add eggs, water, and continue mixing at low speed. Once the dough comes along, add salt, then butter, and continue mixing until they combine completely with the dough.

Note: The dough will appear dry and shaggy at first.

Once the dough is completely smooth, elastic, and shiny, place it in a bowl, cover it, and refrigerate it overnight. To make the chocolate filling- place butter, chocolate, and cocoa powder in a bowl- microwave them. Unless they completely melted. Whisk in the powdered sugar and set it aside to thicken (this should take about 30 minutes). Lastly, assemble the babka: divide the dough, roll it, and spread the chocolate mixture over it.

Then line a large baking sheet with parchment paper, transfer the braided babka, and bake in an oven that has been preheated to 3750F. While the babka is baking, make the simple syrup by mixing sugar and water together, then boil it to dissolve the sugar. Once the babka is ready, brush it with syrup evenly. Allow it to cool down before serving. You can freeze it up to a month.
