Carrot Cake Bars

A funny way to turn your typical carrot cake into cake bars, the same flavor with some upgrades to make it unique while it remains the texture and rich flavor of the carrot cake that we love. This recipe is easy to make and the result is this moist and rich cake bar topped with cream cheese that will melt in your mouth with flavor. 

This works perfectly as a nice way to start your day or end it with a nice slice of cake for a quick snack with some tea or coffee. Sounds lovely right? Well, you are going to love this recipe, everyone loves carrot cake and this will be game-changing for all carrot cake bakers and eaters. 

We are using the regular ingredients for a carrot cake but we will also be adding extra ingredients for more flavor. vegetable oil, white and brown sugar, eggs and vanilla extract, needed for our cake base. We could use all-purpose flour or whole wheat flour. Spices for that special taste, cinnamon, nutmeg, and cloves are the ones we will be using today. Also baking soda and powder, salt, and our grated carrots. The frosting of cream cheese is easily made with some cream cheese, butter, salt vanilla, and sugar. Less sugar will give a firmer frosting. 

If you like your cake crunchy you could add some extra nuts, and or raisins. 

To begin with our carrot cake bars we are going to heat our oven at 350º Fahrenheit and prep a baking dish preferably of 9×9 inches with some cooking spray. 

Then we are going to gather our wet ingredients and mix them together. Mix well and then add the eggs, and vanilla, keep mixing until we get a smooth and nice mix. 

After that mix the dry ingredients in a separate bowl, that will consist of the flour, cinnamon, baking soda, baking powder, salt, nutmeg, and cloves. 

Once we have our two mixes of dry and wet ingredients we want to mix them together. Adding the dry with the wet ingredients, until we get a blended mixture. Add the grated carrots and mix. In case of wanting to add extra ingredients like nuts and or raisins, you can add them now as well. 

Pour your batter into the baking platter and spread it until it’s evenly. Put it into your heated oven and let it bake for 40 minutes. Your cake should start looking nice and golden or you can simply stick a toothpick in it if it comes out clean. Your cake is ready. 

Take your cake out of the oven and let it cool. Start working in your frosting. 

Mix your cream cheese, butter, and vanilla until it’s nice and smooth. Add the remaining sugar and mix it until you get the consistency you want. 

Spread your frosting and slice your cake. Enjoy it at room temperature with a nice cup of tea or coffee.
