Cajun Jambalaya Pasta

Cajun Jambalaya Pasta

Ingredients

  • 2 oz. olive oil
  • 1 lb boneless skinless chicken breasts, cut into 1” pieces
  • 2 tablespoons Cajun seasoning
  • ¼ red bell pepper, thinly sliced
  • ¼ green bell pepper, thinly sliced
  • ¼ yellow bell pepper, thinly sliced
  • ½ red onion, thinly sliced
  • 1 tablespoon garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 oz. roma tomatoes, diced
  • 1 ½ cups chicken broth
  • 1 tablespoon parsley, chopped
  • 1 lb fresh linguine pasta

  1. Cook pasta according to package directions and set aside.
  2. In a large saute pan over medium high heat. In a bowl add the chicken and season with the cajun seasoning mixing well.
  3. Add the chicken in the saute pan and cook until it's half way done. Add in peppers and onions to the pan. Saute until vegetables have softened a bit then add in garlic. Season with salt and pepper.
  4. Add in the diced tomatoes and chicken broth. Continue to cook until the chicken and vegetables are tender.
  5. Place the pasta into a serving bowl, spoon the jambalaya mix onto the pasta and garnish with chopped parsley.
