Start preparing stuffed shells by blanching the green in a pot of salted water and cook them until they are wilted; this should take about 30 seconds. Next, cook your pasta shells using the same pot of water used for blanching the greens. Even though the color of the water will greenish-yellow, your pasta will turn out perfectly. Using a food processor, whip up the filling.
Stuff each shell with a spoonful of filling, then place in a casserole dish on top of some marinara. Spoon marinara sauce over the shells and ensure they are not entirely covered. Finish them off by adding your remaining mozzarella cheese. Then bake and serve.
