  • 1 cup cherry tomatoes, diced

  • ¾ cup diced onion

  • 3 tablespoons freshly chopped parsley

  • 1 tomato, diced into fine cubes

  • 1-2 chili peppers, diced into small chunks

  • Juice of 1 lemon

  • Olive oil

    1. In a bowl add the diced tomato and cherry tomatoes, followed by the diced chili peppers. 
    2. Stir in the diced onion and freshly chopped parsley, juice of a lemon and season with salt and pepper to taste. 
    3. Serve cold and enjoy.
