The biggest pain is the first step, which is grating the beets and onions. But if you’re willing to use a little elbow grease, you’ll be just fine. 

So once you’ve grated your veggies and stopped crying from the onions, it’s time to mix everything together! First, add the eggs and make sure they’re well mixed in with the beets and onions. Then sprinkle in the flour and mix it again. Take time to make sure these two ingredients are well incorporated into the whole mess, otherwise, you’ll have weird tasting dry clumps in your finished patties! 

Add in the salt, pepper, feta cheese, and fresh mint, mix again, and then take a break. Your arms have been doing a lot of work! 

While the mixture (and your arms) rest, start heating up your frying pan. Add a decent blob of butter, and watch it melt into delicious goodness. While the butter heats up, start shaping the patties. Don’t be afraid to get in there with your hands! It’s much easier that way. Just make sure you wash your hands thoroughly after all the patties are ready! Otherwise, the beet juice will stain your hands and you’ll be getting some weird looks for a couple of days. 

Gently place each patty in the pan, and let them fry for 5 to 10 minutes on each side. Keep a close eye on everything, checking them occasionally to make sure they’re cooking properly and not burning on the bottom. 

Once they’re all fried up a nice golden brown, transfer them to a plate covered in paper towels so they can drain some of the excess butter. Serve them up alongside a green salad and a nice glass of wine, and you’ve got a meal people would gladly pay money for in a restaurant!
