Ingredients
  • 2 cups arugula

  • 1 cup cooked lentils

  • 1 avocado, thick dice

  • 2 cucumbers

  • ---For Miso Dressing---

  • 3 tablespoons vegetable oil

  • 1 1/2 tablespoons rice vinegar

  • 2 teaspoons white miso

  • 1/4 teaspoon sesame oil

  • 1/2 teaspoon honey

  • 1/2 teaspoon soy sauce

    Instructions
    1. In a bowl combine miso dressing ingredients and whisk well, set aside.
    2. Wash and cut ends off of cucumber, begin to spiralize and set aside.
    3. Begin to build salad placing lentils on bottom, then arugula, spiralized cucumbers, avocados dices and drizzle with miso dressing!
