Lexi prefers savory breakfast food. Rather than indulging in sweets and crashing mid-morning, opting for a savory protein can fuel you up for the rest of the day. Nothing like an efficient and healthy skillet to start things off right. This Latin-inspired meal is three-ingredient at its core, but leaves plenty of room for add-ins: vegetables like kale, spinach, carrots, celery, etc.; frozen peas, corn, beans, etc.; leftover rice, beans, various spices like taco seasoning or chiles—you get the idea! The basic process takes about twenty minutes, with minimal time added if you have the other flavor boosters ready.

One important factor here is the salsa. Spending the extra few dollars on a high-quality and flavorful salsa will make a huge difference. Heat some oil over medium heat in a large skillet and cook the ground turkey or beef until any last trace of pink meat is browned. Now for the salsa. Stir it into the ground meat just until it is heated. You don’t want to lose too much moisture, but at the same time you need a thorough mix to make every bite memorable. Lastly the eggs. Just crack them over the meat and salsa and cook as you prefer.

If you think your palate can handle something slightly sweet alongside this hearty skillet, I would suggest a nice hot cup of café de olla. It drives home the Mexican flavors at work, and provides that kick that protein alone might lack. Happy breakfasting, and have a great day!
