Want to do something a little wacky for Taco Tuesday?

We’re not totally sure that any of these actually count as tacos, so bring on the hate mail. But in our defense, these quirky “taco” recipes are actually really delicious! They may not be traditional, but they sure are tasty — give them a try!

1. Mac and Cheese Tacos

If you’ve never topped American beef tacos with mac and cheese, you are severely missing out. We love this recipe with white cheddar jalapeno mac, but it’s pretty much impossible to go wrong with any variety.

2. Curry Masala Cauliflower Tacos

Not only is this a delicious combo (especially with a lovely squeeze of lime), it’s also healthy, vegetarian and cheap (assuming you have a well-stocked spice rack). Wins all around.

3. Paneer Tikka Tacos

You can also do Chicken Tikka Masala if you’re craving something meaty, but you might be surprised at how amazingly paneer’s texture works in a taco. Here’s how to make paneer (fresh Indian cheese) from scratch.

4. Tuna Ceviche Tacos in a Taro Shell

Use any fish you want, as long as it’s high quality/sushi grade. If your fish grade isn’t high enough or you don’t like it raw, let it marinate for at least 30 minutes (the citrus cooks it). If it’s easier for you, you can buy some taro chips and plate these up like nachos.

5. Slow Cooker Enchilada Tacos

All the yummy enchilada flavor without all the cooking hassle.

6. Grilled Cheese Tacos

Sure, this is majorly branching away from the whole concept of a taco, but then again, we’re talking about grilled cheese here, and grilled cheese makes everything taste amazing. If you’d rather use tortillas, please adapt this concept and make quesalupas.

7. Bulgogi Tacos

Just like they make at Garbo’s. Note: This marinade can be super salty; so you might want to cut back on the soy sauce by half or so, depending on the type you are using and your personal taste.

8. The Best Fried Tacos

Some people fry their tortillas. Why stop there? Why not fry your whole taco?

9. Copycat Doritos Locos Tacos

When we get into Taco Bell territory, you know that any notion of an authentic taco has totally gone out the window. But if you’re a Doritos Locos lover, you’ve got to try making them yourself!

10. Brat and Fried Cheese Curd Tacos

Tomato relish and sriracha mayo perfectly complement these Wisconsin tacos.

11. Couscous Tacos

A great vegetarian and/or budget-friendly option, if you want the standard American taco flavors and textures without the meat.

12. Mini Churro Taco Boats

You didn’t think we’d forget about dessert, did you? For a refreshing treat, grab these cinnamon sugar-coated mini flour tortilla boats (feel free to make your own with small flour tortillas) and fill them with your favorite fruit, complete with a tasty sweet yogurt sauce.
