Summer isn’t quite here yet, but it sure feels like it’s on its way, doesn’t it?
If you are lusting after warmer weather, why don’t you trick yourself into thinking winter is over by making some sweets with summer’s favorite fruit — the blueberry? Fresh or frozen works equally well in most of these recipes, so grab some healthy, delicious berries and get to work!

What’s more summery than a fruit pie? This one is so easy, even with the lattice crust, although we won’t judge you if you buy premade ingredients either!!
This dish is great because you can eat it for breakfast, lunch, dinner or dessert — or all of the above! Plus, you get to put a few greens inside, so it’s totally healthy, right? If you want to elevate this sandwich to the next level, why not toss in a bit of fresh basil or mint?
We adore cheesecake in bar form, because it’s delicious and fun, but also because it’s way easier to make this way, and you don’t need a springform pan or a water bath or any of that nonsense. Not to mention that if you are baking these for company, it’s a lot easier to get away with sneaking a piece!
“Elegant” is in the name, but did you know this fresh, bright beauty is actually pretty easy to make even so? If you want to really simplify things even further, you can always use store-bought crust.
We just love how jam-packed these cakey delights are with tender blueberries, but what really seals the deal is the bright lemon glaze. If you want to go over-the-top flavorful here and play up the zippy, fresh tastes, you can add a bit of basil, rosemary or pistachio. It’s up to you!
This is basically a giant, dense pancake that gets baked in the oven, which is every bit as wonderful as it sounds. Theoretically, it is supposed to be a meal or dessert for the whole family, but then again it’s so delicious that you can eat it all by yourself and still be able to say that you only had *one* pancake.
