Have we mentioned how much we love chicken? It's versatile and healthy, and more importantly, it is cheap and easy to make for company or the whole family. Here are some of our favorite chicken taco recipes, although you could easily substitute pork, seafood, or your favorite vegetarian protein like tofu or tempeh.

1. Chicken Tinga Tacos

This bright tasting, tender shredded chicken recipe gets it flavor from a richly-spiced tomato sauce. Feel free to skip the stove and just dump everything into a slow cooker instead. For an extra kick, throw in a few chipotle peppers.

2. Grilled Chicken Tacos

Cola might seem like an odd secret ingredient, but just trust us that it really nicely tenderizes and flavors the chicken. Once you start adding soda to your marinades, you'll never go back.

3. Grilled Tamarind Chicken Tacos

Like the coke in the above recipe, the tamarind soda tenderizes the meat and infuses it with a delightful tamarind flavor. We're a big fan of killing two birds with one stone, and this method is way easier than working with actual tamarind.
