Slow Cooker Chicken Chili

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup celery, diced
  • 1/2 red onion, diced
  • 1 teaspoon garlic, minced
  • 1 pound ground turkey (dark meat)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon celery salt
  • 1 pack ranch mix
  • Salt and pepper to taste
  • 1 can white beans
  • 1 can corn
  • 1 can chopped tomatoes
  • 3 cups chicken broth
  • Cream cheese
  • Crumbled blue cheese
  • Chopped cilantro

With winter on its way, we can all agree that nothing is easier than throwing a bunch of stuff into a slow cooker and letting it make you something warm and delicious. Give this Slow Cooker Chicken Chili a try! It's not super spicy (unless you want it to be!) and it's easy and tasty. Feel free to mix it up with stuff you like!
  1. Add oil and sauté celery, onions, and garlic until soft in a skillet over medium heat. Add chicken and turkey. Mix until fully cooked.
  2. Remove chicken and turkey from heat and pour into a medium-sized slow cooker. Add onion powder, garlic powder, celery salt, ranch mix, salt, pepper, white beans, corn, tomatoes, and chicken broth. Stir together.
  3. Cook chili on high for 3 to 6 hours.
  4. When ready to serve, stir in two tablespoons of cream cheese and sprinkle crumbled blue cheese and cilantro on top. Add hot sauce for a spicier finish.
