Spicy Bean & Cheese Burrito

Ingredients

  • 1 box Zatarain’s Taco Rice Mix
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup shredded Mexican blend cheese
  • 1 cup salsa (your preferred level of spiciness)
  • 4 large flour tortillas
  • 1 tablespoon vegetable oil
  • Optional toppings: diced tomatoes, sliced jalapeños, chopped cilantro, sour cream, guacamole, shredded lettuce.

  1. Cook Zatarain’s Taco Rice Mix according to package instructions. Set aside.
  2. In a medium bowl, mash the black beans using a fork or potato masher until they reach your desired consistency. Warm the flour tortillas in the microwave for about 30 seconds or until they are pliable.
  3. Divide the cooked rice, mashed black beans, shredded cheese, and salsa evenly among the tortillas, placing the ingredients in a line down the center of each tortilla.
  4. Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
  5. Heat vegetable oil in a large skillet over medium heat. Place the burritos seam side down in the skillet and cook for 2-3 minutes on each side, or until they are golden brown and crispy.
  6. Remove the burritos from the skillet and place them on a serving plate. Serve the Spicy Bean & Cheese Burritos hot, optionally topped with diced tomatoes, sliced jalapeños, chopped cilantro, sour cream, shredded lettuce or guacamole. Enjoy your delicious and flavorful meal!
