Delicious Pea Risotto Recipew
This pea risotto recipe makes the perfect side dish for any occasion. You can serve it along with chicken, beef, and even ham. There are a few variations you can try by adding sweet peas instead of regular peas, and you can even add bacon.
The ingredients you will need are as follows:
1 tbs olive oil
1 onion peeled and finely chopped
2 cups short-grain white rice
1/2 cup dry white wine
5 1/2 cups fat-skimmed chicken broth
8 ounces shelled fresh peas, or 1 1/2 cups frozen peas
1/2 cup shredded parmesan cheese
Salt and pepper
The directions are as follows:
Step 1- pour olive oil int a sauce pan over medium high heat until hot
Step 2- add onion and stir til limp, this usually takes 5 minutes
Step 3- add rice and stir until opaque, this should not take more then five minutes
Step 4- add wine and stir until completely absorbed.
Step 5- add in the chicken broth a cup at a time, stirring between each cup. When you add the second cup of broth pour in the peas as well.
Step 6-If risotto is to thick add more broth, then stir in cheese and add salt and pepper.
