- • 1 pound swordfish
- • Thinly sliced garlic (2 cloves)
- • 3 tbs olive oil
- • 2 tbs white wine
- • 1/4 cup toasted pine nuts
- • 4 paste tomatoes, seeded and diced
- • 1/4 cup chopped parsley
- • Flour
- • 2 teaspoons smoked paprika
- • A dab of salt &pepper
Step 1- remove the skin from the swordfish and then cut it into even small pieces
Step 2 – season the fish with salt and pepper and dust it in flour
Step 3- heat the olive oil in a big pan and sear the fish on one side for about 2 minutes.
Step 4- flip the fish and sear on the other side for another 30 seconds.
Step 5- when the fish is cooked, put it in a bowl
Step 6- add the sliced garlic and sauté it for a few seconds
Step 7- add all the remaining ingredients and cook them for a minute
Step 8- in the end add the fish and cook everything together for one minute.
