Chicken is one of the most commonly cooked meats. Low in fat and cholesterol yet high in protein, chicken is an excellent choice for those who wish to maintain a healthy diet. Furthermore, chicken is very versatile as it can be cooked several different ways. Below is a delicious chicken recipe that will be a pleasure to any palate.
Step 1: place 1 1/2 pounds of chopped apricots in a large mixing bowl. Stir in 1/4 cup of sugar and 2 tablespoons of vinegar. Let sit.
Step 2: Heat one tablespoon of unsalted butter and one tablespoon of olive oil in a large saute’ pan over medium-high heat. Place two pounds of cut skinless chicken breasts (chicken should be cut in one to two inch pieces) and place them into the pan, browning on each side. As the chicken cooks, sprinkle with a small amount of salt and black pepper. Once chicken is browned, remove from the pan and place in a bowl.
Step 3: Add two more table spoons of olive oil to the pan and saute one chopped onion until it starts to brown. Use a wooden spoon or spatula to scrape the fond (browned bits from the chicken) from the pan.
Step 4: Once the onions have browned, add two cups of chicken stock and lower heat to medium.
Step 5: Place roughly 2/3 of the apricots, along with the extracted juice, into a blender and blend. Once blended, pour into the pan containing the onions and chicken stock.
Step 6: Add one teaspoon of cinnamon, one tablespoon of rosemary, and two teaspoons of Tabasco to the pan. Bring to a simmer, then lower the heat and lightly simmer for 15 – 20 minutes.
Step 7: When ready to serve, place the chicken and the rest of the apricot pieces into the pan and simmer lightly for five minutes.
This recipe is now ready to be served hot over rice.
