• 2 cups of raisins
  • 1/2 cup rum
  • 1 1/3 cup softened butter
  • 1 1/3 cup granulated sugar
  • 4 large eggs
  • 3 1/3 cups self rising flour, sifted
  • 1/4 cup milk
  • -Icing Ingredients
  • 1 1/8 cup softened butter
  • 4 1/2 cups confectioners sugar
  • 2/3 cup rum
  • 1/8 teaspoon of allspice
  • 1 cup raisins



Rum lovers will delight in these Rum Raisin Cupcakes with Rum Raisin Buttercream Icing! A simple, yet elegant, dessert that takes only 20 minutes to prepare, 30 minutes to bake and serves 24.

 

Step 1- Pre-heat oven to 325°F
Step 2- Place 2 cups raisins and 1/2 cup rum in saucepan bring to simmer over medium heat and remove
Step 3- Cream softened butter with granulated sugar until light and fluffy, add eggs one at a time
Step 4- Fold in flour, mix well
Step 5- Stir in milk and raisins (rum will soak in or evaporate)
Step 6- Spoon batter into lined or lightly greased cupcake tins, fill 2/3 full, bake 25 to 30 minutes, remove and cool completely

Prepare Icing
Step 7- Cream butter with 2 1/2 cups of confectioners sugar
Step 8- Add rum and allspice, then add confectioners sugar 1/4 cup at a time, cream until smooth
Step 9- Stir in raisins
Step 10- Ice cooled cupcakes and enjoy!
