- • 2 cups of flour (plus additional flour for the board for rolling and kneading)
- • ½ tsp salt
- • 1 large egg
- • ½ cup sour cream
- • ¼ cup softened butter
- • 5 large potatoes of your choice
- • 1 large chopped onion
- • 8 oz of your favorite cheese
If you enjoy perogies then you have probably found them frozen in your local grocery store. Making them on your own can be very rewarding and not as difficult as you may think. The nice thing about this is that there are many different variations of the recipe that you can make. Though this recipe is simply using potatoes, onions and cheese for the filling, you can add bacon, chives or anything else that sounds good to you. It really gives you the chance to get your creative juices flowing and make the perogies really compliment the food they are going with.
You will get about 12 – 15 perogies with this recipe depending on the size and the total time to make them is about 45 minutes.
Instructions
Step 1- Mix the flour and salt and then add the egg, beating until fully mixed.
Step 2- Add in the butter and sour cream and work the dough until it is not so sticky
Step 3- Put in the refrigerator for 30 minutes to allow the dough to harden. (You can also leave the dough in the refrigerator overnight or for a maximum for 2 days.)
Step 4- While the dough is hardening, peel and cut the potatoes. Boil them until they are soft
Step 5- While the potatoes are boiling, put a little butter or oil in a pan and sauté the onion and set aside
Step 6- Mash the potatoes with the onions and cheese. If you season your potatoes, this is where you would want to do so.
Step 7- Allow the potato mixture to cool and then form them into 1 inch balls.
Step 8- Once the dough is hardened, you will want to roll it on a floured surface until it is about 1/8 of an inch thick. Then using a round cookie cutter or drinking glass, cut out round pieces of dough.
Step 9- Place one ball of potato mixture in each circle. Fold the dough over to form a semi-circle and seal the edges with a fork. If the dough is having problems sticking, use a little water on the edges.
Step 10- Cook the dough in your favorite fashion. This could mean boiling the perogies, which is the most popular method. You can also bake them, deep fry them or even just sauté them in a pan with butter.
