• One large pineapple
  • Six cups vanilla ice cream
  • ½ cup maple syrup, divided
  • ¾ cup melted butter
  • ¾ cup brown sugar (dark is best)
  • ½ cup whipping cream
  • 2 tbsp rum (or 1 tbsp rum extract)
  • 1 cup crushed pecans, peanuts or walnuts (optional)
  • 1 cup toasted shredded coconut (optional)
  • One jar maraschino cherries (optional)
  • One can crushed pineapple (optional)
  • One can whipped cream (optional)



Make this Grilled Pineapple & Maple Sundaes recipe that is sure to please everyone in your household. The maple rum butter cream is an easy substitute for commercial topping. For a fun evening, turn your kitchen counter or table into a sundae bar. Put out each of the ingredients and let the kids make their own sundae just the way they like it.

Instructions:
Step 1 — Peel and core the pineapple. Cut into six, 1-inch slices.
Step — Preheat grill to medium heat.
Step — Combine ¼ cup maple syrup and ½ cup melted butter.
Step — Brush one side of the pineapple slices with the melted butter and maple syrup mixture. Lay on grill, butter side down.
Step — Brush other side of pineapple with remaining butter and syrup mixture. Flip the slices after 3-4 minutes.
Step — Cook another couple of minutes or until slices are soft and there are nice grill marks on the pineapple.
Step — In a saucepan combine ¼ cup melted butter, sugar and ¼ cup maple syrup. Stir as you simmer the mixture for about 4 minutes.
Step — Remove from heat and whisk in the whipping cream. Return to heat and bring it to a boil, stirring constantly.
Step — After about 6 minutes or when the mixture has thickened considerably, remove from heat.
Step — Whisk in rum or rum extract. If you used unsalted butter add a pinch of salt as well. Let the mixture cool.
Step — Place a grilled pineapple ring in the center of an edged plate or bowl.
Step — Put a scoop of vanilla ice cream on top of each ring.
Step — Top with maple run butter cream.
Step — Add your own optional ingredients including crushed pineapple, cherries, crushed nuts and shredded coconut.
Step — Finish with a dollop of whipped cream.

Cooking time 10 minutes for grill, 10 minutes for syrup.
Serves 6.
