The outcome of your French onion and cheese fondue recipe will depend on the type of cheddar cheese you buy. Cheddar cheese comes in various strengths; there is mild cheddar, medium cheddar, mature cheddar and extra tasty cheddar. To give the fondue a good tangy taste you need to buy an extra tasty cheddar cheese. The strong cheese has a good `bite` and it gives the fondue a sharp taste.
Ensure that the grated cheddar cheese is the last ingredient added. This enables the grated cheese to melt gently and retain its taste.
This cheesy fondue is very tasty and it is particularly good when some caramelised onions are stirred into it, the caramelised onions add a touch of colour and oodles of taste to the dish.
The fondue is good served with cubes of fresh crusty bread but it is also good when it is served with crunchy fresh vegetable sticks.
