Crispy, light, and delicious, these Italian cookies make great deserts and snacks. These classic Italian macaroons are especially great with fruit dessert. The Amaretti cookies recipe below will show you how to make 18 of these tasty cookies in only a few minutes.

How to make:

Step 1- Preheat your oven to 170°C. Combine 3/4 cup caster sugar, 180g almond meal, 1/3 cup plain flour, 1/2 teaspoon vanilla extract, and two egg whites in a large bowl. Make sure you mix well.
Step 2- Shape single tablespoonfuls of the almond mixture into balls. Place the balls into a baking tray lined with baking paper.
Step 3- Gently press each ball to slightly flatten.
Step 4- Bake the dough until golden (usually 20 minutes).
Step 5- Take out and let it cool.
Step 6- When the Amaretti cookies are completely cooled, serve and enjoy!

Notes:

You can keep these cookies in an airtight container for a couple of days. If you serve right away, they will be more chewy in the inside. On the other hand, the cookies will be more crunchy if you serve later.
