• 6 pieces chicken thighs, about 2 to 2 ½ pounds
  • 3 pounds of sliced yellow onions, around ¼-inch thick from root to stem.

  • 1 tablespoon of brown sugar

  • 1 cup of chicken stock
  • 1 ½ cups of dark beer
  • 2 teaspoons of dried thyme
  • 2 tablespoons of smooth Dijon mustard
  • Salt and freshly ground black pepper to taste



Beer braised chicken and onions recipe is actually an easy dish to make. As long as you have all the necessary ingredients and equipment, you don’t have to be a pro to make your very own beer-braised chicken recipe.

 

Instructions:
Step 1 — Melt a tablespoon of butter in a large pot over medium heat. Make sure that the thighs are dry by patting it with paper towels. Place them gently on the pan with the skin side down. Add salt on the meat side lightly. Once the chicken is brown on both sides, removed them immediately from the pan and set them aside on a plate.

Step 2 — Since chicken thighs contain quite an amount of fat, make sure to drain some of it from the pan. However, you should leave at least two tablespoons of oil to cook the onions. Once done, you can now cook the sliced onions on medium heat and add a sprinkle of brown sugar. Adding sugar is actually optional, but this can help enhance the sweetness of the onions. Cook the onions slowly and stir it occasionally until they begin to brown. This will usually last for 15 minutes.

Step 3 — Add the thyme, bay leaves, mustard, additional salt, and beer into the onions. Make sure that the brown debris at the bottom is thoroughly scraped using a wooden spoon. Once the mixture is simmering, you can now add the chicken thighs into the pot.

Step 4 — Cover the pot with the lid for around 45 minutes. After that time, check the pot to make sure that the liquid or sauce is reduced. The meat of the chicken should be very tender by this time and it should almost come out of the bone. If you are using unsalted stock for cooking, then you should add more salt and black pepper to enhance its taste.

The duration for cooking this meal is around 1 and ½ hours. This meal is best served with egg noodles or potatoes and can feed a maximum of 8 people.
