- 4 slices Canadian bacon
- 1 teaspoon vinegar (white)
- 4 eggs
- 1 cup butter
- 3 egg yolks
- 1 tablespoon heavy cream
- 1 pinch cayenne pepper
- ½ teaspoon ground salt
- 1 tablespoon lemon juice
- 4 English muffins, toasted
Eggs Benedict Recipe
Always a treat, Eggs Benedict has become a favorite among items ordered at restaurants. Following is a crowd-pleasing way to make them in comfort of your own home.
Directions:
Step 1 – fry Canadian bacon over medium heat
Step 2 – fry each side until evenly brown
Step 3 – fill large saucepan with 6 inches of water, simmer
Step 4 – add vinegar
Step 5 – gently break each of the 4 eggs into the water
Step 6 – cook 2-3 minutes: whites should be set, but not rigid
Step 7 – remove eggs carefully with slotted spoon
Step 8 – while eggs cook, melt butter to bubbles (do not brown)
Step 9 – blend: yolks, cream, cayenne, and salt until smooth
Step 10 – stream half of melted butter in, while blending
Step 11 – blend in lemon juice
Step 12 – blend in remaining butter
Step 13 – place 1 slice bacon and 1 poached egg on 1 open muffin
Step 14 – drizzle with cream sauce, and serve immediately
