- 12 large scallops
- 12 slices smoked bacon cut in half.
- 3 tablespoons olive oil
- ½ teaspoon black pepper
- 1 tablespoon chopped garlic
- Juice from one fresh squeezed lemon
- 3 whole lemons
- Large toothpicks or skewers
- Non-Stick cooking oil spray
- 2 cups shredded lettuce
- One cup tartar or cocktail sauce (optional)
This bacon-wrapped scallops recipe is easy and delicious. They are great as either an appetizer or a snack when you are entertaining.
Instructions:
Step 1 — Combine oil, pepper, garlic and lemon juice in a small mixing bowl.
Step 2 – Whisk gently.
Step 3 – Cut each scallop in half.
Step 4 — Add scallops to bowl.
Step 5 – Cover bowl with plastic wrap and refrigerate for one hour.
Step 6 – When scallops have been marinating for 45 minutes, preheat oven to 375F.
Step 7 – Line a cookie sheet with tinfoil. Spray with non-stick cooking oil.
Step 8 – Lay pieces of bacon side by side making sure none overlap.
Step 9 – Bake for 8 minutes to render off some of the fat. Bacon should still be pliable.
Step 10 – Drain bacon on paper towels and drain the fat off of the cookie sheet.
Step 11 — Wrap each scallop with a half piece of bacon and secure with a toothpick.
Step 12 — Place the scallops on the cookie sheet.
Step 13 — Bake for 8 minutes.
Step 14 – Flip each scallop and bake about 6 minutes more.
Step 15 — Remove from oven and pat excess grease lightly with paper towel.
Step 16 – Line a serving plate with the shredded lettuce.
Step 17 – Cut remaining lemons in wedges.
Step 18 – Place bacon-wrapped scallops on serving plate and surround with lemon wedges.
Step 19 – If using tartar or cocktail sauce, pour into small bowl and place in center of serving plate.
Serve hot.
Cooking time is approximately 15 minutes. Serves 4-8 people.
